 6 Eggs
 2 cups Zucchini grated
 1 cup Carrot grated
 1 Onion Chopped
 2 Garlic Cloves
  cup Extra virgin olive oil
 1 tsp Baking powder
 1 cup Gluten Free flour
 100 g Feta or Goats Cheese
 Salt & Pepper

Preheat the oven on 180 C and put some baking paper in a baking dish of your choice.

Mix together zucchini, carrot, onion, garlic, eggs and olive oil.

Add the feta and spices to taste.

Pour in the flour and baking powder and mix until well combined.

Slowly pour the entire mixture into the baking dish. If you feeling extra groovy in the kitchen today thinly slice some zucchini and add them on top of the dish.

Bake in the oven or about 35 minutes until the dish is golden brown.

Let it cool down until you slice the dish into medium sized squares.

Keep these in an air-tight container in the fridge for when the hunger strikes.
