This delicious chocolate and beetroot brownie is filled with nourishing foods that will keep your energy levels up instead of giving you that sugar induced tiredness.

 2 Eggs
 1 cup Beetroot grated
 ½ cup Medjool dates
 2 tbsp Raw cacao
 ¼ cup Dark chocolate (85%) melted
 ½ cup Walnuts chopped

1. Preheat the oven to 180C and line a cake tin (25 x 25) with baking paper.

2. Place beetroot and dates into a blender or food processor (I use a Vitamix) and blend until a paste is formed.

3. Add cacao, eggs, protein powder and melted dark chocolate to the mixture and blend until smooth.

4. Fold in the walnuts and pour the mixture into the tin and bake for 15-20 minutes or until firm.

Let the cake cool for 5-10 minutes. Remove from the tin and slice.

Serve with berries, greek yoghurt or dairy-free coconut yoghurt if want to use this as a healthy dessert option.
