Now, why do I love gummies? And what are they really?

Gummies are made from gelatin aka collagen which is an amazing food filled with gut healing properties but that also supports our skin, joint, hair and nail health. We can finally say good bye to the dreadful post partum hair loss. I can honestly say that gelatin and collagen supplementation has helped my skin and hair repair so much after pregnancy. Plus I get to eat healthy snacks so its a win win for me!

Collagen is also great to add to smoothies, coffees or whatever hot drink you prefer. It is the perfect nutritional boost when you are in a hurry and need something nourishing. Only 1 tbsp is filled with amazing 6 grams of protein and it comes with a very impressive amino acid profile.

 35 tbsp Gelatin powder
 15 cups Coconut milk
 1 tsp Vanilla Essence
cup Peanut butter crunchy (without any additives)
 1 tbsp Rice Malt Syrup
1

Blend the gelatin with 1/4 cup of water in a separate bowl and let sit for a few minutes until it forms into a gel.

In a small sauce pan, heat up the coconut milk, vanilla essence and the rice malt syrup. Add the peanut butter and make sure it dissolves properly into the mixture.

Add the gelatin gel into the sauce pan and stir for a minute or two.

Fold into a square baking pan (I put some baking paper in the bottom) and let it set in the fridge or freezer depending on how quick you want to eat it!

When the mixture is firm, cut into squares of your choice and keep in an airtight container in the fridge.
