This delicious carrot bread has become my latest food obsession. It is not only easy to make, but also gluten, dairy, yeast and sugar free! Perfect for breakfast or just an afternoon snack. It is so easy to whip up – anyone can do it!

This bread is filled with beta-carotine, a precursor to vitamin A, which is great for your immune system, heart and skin health.  Filled with anti-inflammatory antioxidants, this bread is a nutrient power house that your body and skin will love you for.

other INGREDIENTS

1,5 medium sized grated carrots

3 eggs

1/4 cup almond flour

1/4 cup coconut flour

1 tbsp psyllium husk

1 tbsp grounded flaxseeds

1 tsp organic baking powder

1 tbsp pepitas

1 tbsp sunflower seeds

1/2 tsp. himalaya or celtic sea salt

Put the oven on 200 ° C. Mix all ingredients together thoroughly. Pour into a 25 * 25 cm sized pan (1 cm thick) and let it sit for about 5 minutes. Top off with pepitas and sunflower seeds. Cook in the oven for about 10 minutes until the bread has a golden brown color.
