I always make at least one batch every week and it goes so quickly. A great afternoon snack or for breakfasts on-the-go when you are running around like a crazy person (me every day!). This healthy banana bread is a great snack for when you are craving something sweet, but trying to avoid sugary and processed foods. Best of all, it is filled with lots of gut healthy fibre, good fats and protein to keep your sugar levels balanced and reduce any cravings!
If you are a busy mum or spending lots of time at home with a newborn, this one is a must!
1/2 cup milk of choice ( I use unsweetened almond milk)
1/2 cup almond meal
1 cup oats
3 medium sized ripe bananas
1/2 cup coconut oil
1 tbsp chia seeds
2 tsp baking powder
1 tsp cinnamon
Put the oven on 180 C. Put all the liquid ingredients in a high speed blender and blitz for a minute or two. Slowly add the dry ingredients and mix on and off until the whole mixture is well combined. Place in a standard loaf tin and cook for about 45 minutes. Let the bread cool down until you slice it. I usually keep it in the fridge for up to about 4 days but it can also be put in the freezer.
